Chicken thighs are the key here — they stay juicy over high heat in a way breasts just don't. A simple marinade of lemon, garlic, oregano and olive oil does the rest.
Marinate for as little as 30 minutes or as long as overnight. Serve with flatbreads, a crisp salad and a spoonful of garlicky yoghurt.

- In a bowl, mix the olive oil, lemon zest and juice, garlic, oregano, paprika, 1 tsp salt and plenty of black pepper.
- Add the chicken, toss to coat, then cover and marinate in the fridge for at least 30 minutes (or up to 24 hours).
- If using wooden skewers, soak them in water for 20 minutes. Thread the chicken and red onion alternately onto the skewers.
- Heat a barbecue, griddle pan or grill until very hot. Cook the skewers for 10–12 minutes, turning every few minutes, until charred and cooked through.
- Rest for 5 minutes, then scatter with parsley and serve with lemon wedges.
