This traybake has everything you love about an apple crumble. There's a soft, spiced apple layer and a crunchy golden topping. It also has a buttery shortbread base, so it slices neatly into squares for lunchboxes, picnics and the office cake table.
Use a mix of apples if you can. Bramleys collapse into a soft sauce, while eating apples keep their shape, and together they give you the best texture.

- Heat the oven to 180°C / 160°C fan. Grease and line a 20 x 30cm traybake tin with baking paper.
- Rub the butter into the flour until it looks like breadcrumbs, then stir in the brown sugar and salt.
- Press two-thirds of the mixture firmly into the tin to make an even base. Bake for 15 minutes until pale golden.
- Meanwhile, stir the oats and half the cinnamon into the remaining crumble mixture, squeezing it with your fingers to make some clumps.
- Toss the apples with the caster sugar, lemon juice, cornflour and remaining cinnamon. Spread over the hot base, then scatter the crumble on top.
- Bake for 30 minutes until golden and the apples are tender. Cool completely in the tin before cutting into 16 squares.
